This can be served hot or cold with fresh strawberries and Weight Watchers Vanilla Ice cream.
Ingredients:- ¾ cup S.R Flour
- ½ cup Plain Flour
- ½ tsp Bicarb Soda
- 1 tsp Ground Cinnamon
- 1 tsp Ground Nutmeg
- ½ cup Brown Sugar - optional
- ½ cup Orange Juice
- 2 Egg Whites, lightly beaten - or Egg Replacer
- 1 cup Skim Milk
- 410g Can Pitted Cherries - look for the no-added sugar variety
- 2 Tbs Icing Sugar, for dusting - optional
Method:- Preheat your oven to 160C
- Lightly spray a round baking tin with a non-stick cooking spray and line the base with baking paper.
- Sift the flours, soda and spices in a large bowl and add the sugar.
- In another bowl, combine the eggs, juice, milk and cherries well.
- Stir it in the flour mixture and combine it well.
- Pour the mix into your cake tin and bake it for about 45 minutes or until it passes the knife in the middle test.
- Allow it cool in the tin and then turn it over onto a plate and sprinkle with icing sugar.
TIP: To make a nice pattern with the icing sugar, cover the cake with a paper doley (the ones they serve sandwiches on). Much like a stencil, sprinkle the sugar over it. Lift it off carefully and you are left with a pretty design.
