http://www.diabetesnsw.com.auIngredients:- 125g margarine, polyunsaturated or monounsaturated
- ½ cup castor sugar
- 2 eggs
- 1 teaspoon vanilla essence
- Rind and juice of 1 orange- about ¼ cup (see tip 1)
- Low fat milk (about ¼ cup)
- 2 cups self raising flour, sifted
- 1 x 100g packet glace cherries, chopped
- ½ cup drained unsweetened pineapple pieces (see tip 2)
What to do:- Turn on oven to 180C (350F).
- Beat margarine and sugar together in mixing bowl until creamy.
- Add eggs 1 at a time, beating well.
- Blend in vanilla and orange rind.
- Pour orange juice into measuring cup. Add milk to make ½ cup of liquid. Do not worry if the milk seems to separate - it will not effect the cake.
- Fold ¼ of the flour into the creamed mixture, followed by ¼ cup of the liquid and repeat.
- Then fold in the rest of the flour lightly
- Arrange cherries and pineapple pieces in the base of a greased 10 x 20cm loaf tin.
- Spoon over the cake mixture. Smooth top with a spatula.
- Bake in oven at 180C (350F) for 35 to 40 minutes or until a skewer poked in the center comes out clean and dry.
- Turn out onto a wire rack to cool. Serve sliced.
Tips:- Tip1: Remove rind from orange by rubbing orange on the fine side of a greater until the orange colour only is removed. Do not great white pith, as this does not taste nice.
- Tip 2: After removing liquid from pineapple, place pieces on kitchen paper to dry as much as possible.
