Ingredients: 1 ½ cups pureed banana - about 3 medium bananas
1 cup dates, chopped
2 1/3 cups Wholemeal SR Flour
1 ½ teaspoon Baking Soda
½ teaspoon Cream of Tartar
1 teaspoon Cinnamon
½ teaspoon Nutmeg
1 ½ cups Honey
1 teaspoon Vanilla Essence
1 cup boiling water
4 Egg Whites
Method: - Preheat the oven to 350F.
- Shift together, the flour, half of the baking soda and spices in a large bowl.
- In a medium bowl, mix the honey, vanilla and pureed banana.
- Stir in the flour mixture just until blended.
- In a blender, on high speed, process the water, dates, remaining baking powder soda until dates are pureed.
- Stir into the flour mixture.
- Beat the egg whites until soft peaks form and fold into the batter. Do not over mix.
- Spoon the batter into a largish non-stick baking pan.
- Bake for about 30-35 minutes or until the center in is dry.
This will keep in an airtight container. It can be sliced and served cold as a treat with coffee or pre/post exercise. Or as a dessert warmed up in the microwave with a low fat ice-cream, a few strawberries on top, then sprinkle a dash of maple syrup on top and finish with a dusting of caster sugar.
