For that extra special treat, serve the banana bread with a pot of Simply Tea, but remember there are some rules when making a pot of tea.
"Always fill the kettle with fresh cold water; use one teaspoon of tea for each person and one for the pot; pour the water onto the tea as soon as it boils; and, brew for three to five minutes which will ensure mum enjoys the full and complex flavour of the tea blend. If the strength is not to your liking, adjust the amount of tea you use - not the brewing time. Once brewed, stir and serve," he added.
Banana and pecan loaf
Preparation time: 10 minutes
Cooking time: 45-50 minutes
Serves 6-8
Ingredients1/2 cup milk
2 Twinings Simply Tea teabags
1 1/2 cups self raising flour
2/3 cup brown sugar
1/4 teaspoon cinnamon
1/2 teaspoon bi-carb soda
2 eggs, lightly beaten
1/3 cup canola oil
1 1/4 cups mashed ripe banana
1 cup roughly chopped pecans
1/ Place the milk in a small saucepan with the teabags and bring to the boil. Remove from the heat, allow the tea bags to steep for a minute, then remove and discard. Chill the milk until cold.
2/ Preheat oven to 170C. Sift the flour into a large bowl along with the brown sugar, cinnamon and bi-carb. Make a well in the centre.
3/ Whisk together the eggs, tea infused milk and oil until fully combined.
4/ Pour the wet mixture into the dry ingredients, folding gently until just combined, and then fold through the banana and pecans.
5/ Pour the mixture into a lightly greased and lined 10cm x 20cm loaf tin. Bake for 45-50 minutes or until golden and cooked through. Cool in the tin for 5 minutes then turn out onto a wire rack.
6/ Serve sliced banana loaf warm, toasted or at room temperature with a cup of Twinings Simply Tea.
