From creative lunchbox recipes to innovative ways to get kids eating their vegetables, Obela's Expert Mum, Chantelle Ellem of Fat Mum Slim, knows a thing or two about lunch box prep. As one of Australia's favourite parenting bloggers, she shares her tips to get kids excited about their lunch and give parents ideas to break the everyday lunchbox routine.
Finding ways to get kids eating their veggies is often a daily parenting challenge, and studies show that just 5.4% of children aged 2-18 years met the guidelines for getting the recommended daily serves of vegetables, which is a worrying figure for growing bodies.
Chantelle comments, 'As a mum, I know that it can be hard to find inspiration for healthy lunchboxes day after day. Kids can be such fussy eaters, but a little creativity can go a long way, and kids won't be eating vegemite sandwiches all the time."
Sandwich hamburgers
Get kids excited about eating -hamburgers' for lunch, using homemade leftovers. Using a beef patty recipe, add in a cup of grated veggies, such as zucchini, carrot, capsicum. Create the hamburger sandwich by adding sliced tomato, lettuce and cheese, and spread the sandwich with smooth Obela hommus instead of mayo for an extra delicious healthy twist.
Cheesy savoury muffins
Instead of packing sugary snacks, try mixing up your muffin recipe for something a bit healthier without compromising on great taste. Grated carrot, zucchini and mushroom can be used in savoury muffins, and mixed with cheese and the muffin mixture – kids won't realise the tasty snack is actually healthy!
