Blueberry Soup

Serves 2

Ingredients
2 cups (310g) fresh blueberries
1/2 cup (125ml) water or vegetable stock
2 tablespoon of rice malt syrup
1 tablespoon fresh lemon juice
1/4 teaspoon ground cardamom
1 cinnamon stick
2 tablespoons dry red wine
2/3 cup (160g) plain low-fat yoghurt
Mint sprigs for garnish
Cardamom to garnish

Method
In a small saucepan bring blueberries, water, rice malt syrup, lemon juice, cardamom and cinnamon stick to the boil.
Reduce heat and cook for 5 minutes stirring constantly.
Remove cinnamon stick and allow mixture to cool. Pour into a blender or using a stab mixer puree for 1 minute or until smooth.
Cool completely in refrigerator and when ready to serve stir in wine and yoghurt. Garnish with mint leaves and a sprinkle of ground cardamom.
Add salt to taste if desired.
Ladle into individual bowls, and garnish with yoghurt, mint and a little cardamom.

According to a recent Firmenich social media study, blueberries were the number one superfood discussed online. Also, in a recent survey across 16 countries conducted with nearly 5,000 consumers, Firmenich found the top emotion associated with blueberries was happiness followed by a sense of comfort. 

Pantone recently made headlines globally, announcing Classic Blue as Pantone's Colour of the Year for 2020. Blueberry notes is a distinctive feature of Classic Blue and according to Laurie Pressman, vice president of the global purveyors of colour consulting, trendspotting and analysis for Pantone Colour Institute, "Classic Blue is a vibrant yet non-aggressive and easily relatable colour, she said. "It's also among nature's anthocyanin pigments possessing antioxidant and other health-fostering benefits. Think blueberries."
