Serves: 16 brownies
Ingredients:
2 x cartons (2 x 380g) McKenzie's Lentils in Tetra Pak
85g honey or maple syrup
70g coconut oil, melted
50g brown sugar
25g cocoa powder
¼ cup plain flour
½ tsp McKenzie's Salt
1 tsp McKenzie's Baking Powder
1 tsp vanilla extract
2 large eggs
150g dark chocolate chips
80g McKenzie's Californian Walnuts, coarsely chopped
Extra chocolate chips, for sprinkling
Method:
1. Preheat over to 170C (fan forced). Grease and line a 20x20cm square tin with baking paper.
2. Into the bowl of a food processor, and the lentils, honey, coconut oil and brown sugar and blend until well combined. Next add the cocoa powder, plain flour, salt, baking powder and vanilla. Blend for a further 20 seconds to combine. Finally, add the eggs and blend for another 30 seconds.
3. Stir in chocolate chips and walnuts. Pour mixture into the prepared tin. Sprinkle top with a few extra chocolate chips.
4. Bake for 30-35 minutes until the edges are firm and middle still slightly fudgy.
5. Allow to cool completely before cutting into squares.
