Native to Southeast Asia, jackfruit is the world's largest tree fruit. Beneath its incredibly large and spiky exterior is a mild-flavoured, nutrient-dense, plant-based meat substitute. When cooked up young (a.k.a. not ripe) and seasoned right, this tropical fruit has the texture and taste of perfect pulled pork or shredded chicken. The decision to create a jackfruit product happened when Upton's Naturals' founder Dan Staackmann and his partner (also Upton's Naturals' vice president) Nicole Sopko were eating at a Nepalese restaurant. They ordered a delicious meal made from jackfruit and thought, "Wouldn't it be nice if the process to cook this at home were easier?" Knowing that fresh, unripe jackfruit was hard to come by and that the closest thing to convenience in the category was unseasoned jackfruit in a can, the 20+ year vegan power couple set on a mission to bring pre-seasoned, ready-to-eat jackfruit first to the U.S. four years ago and now worldwide.

 

To produce the products, Upton's Naturals teams with a network of family farms in Thailand that have been growing cultivated jackfruit for many years. Staackmann inspired the group to sell them unripe jackfruit in addition to the ripe fruit they were used to selling. This created extra demand for the farmers, who prior to the arrangement often had unused crops, and resulted in a mutually beneficial relationship for both parties.

Sriracha Jackfruit Tot-chos

  • 1 32-ounce bag tater tots
  • 1 10.6-ounce package Upton's Naturals Sriracha Jackfruit
  • 1 1/2-2 cups vegan cheese or queso
  • 2 cups chopped lettuce
  • 2 cups pico de gallo
  • 1 cup guacamole and/or 2-3 avocados, sliced
  • 1/2-1 cup pickled jalapeños
  • 1 cup chopped cilantro
  • 1/3-1/2 cup vegan sour cream
  • Extra pico de gallo and guacamole (optional)
Directions
Preheat oven to 450°F.
Place the tater tots on a deep baking sheet or large casserole dish and bake according to package directions. Remove from the oven, but keep the oven turned on.

Break up the big pieces of jackfruit in the bag, then spread evenly over the tater tots. Sprinkle the cheese over the jackfruit and tater tots. Bake until the jackfruit is heated thoroughly and the cheese melts, about 10 minutes.

You can either add all of the toppings to the tater tots while in the baking dish, or divide the tater tots onto 4 plates and top each one individually. Start by sprinkling the lettuce over the tater tots, then add spoonfuls of pico de gallo. Add the guacamole and/or sliced avocados, jalapeños, and cilantro, then drizzle or dollop the vegan sour cream.

Serve immediately with sides of pico de gallo and guacamole, if desired.
