Turmeric Maple Slice

Ingredients
Base
• 1 cup oats
• 1 cup buckinis or buckwheat grouts, soaked and dried
• 1 cup desiccated coconut
• 1 cup dates, soaked
• 4 tsp fresh ginger, finely diced/grated
• 3 tsp fresh turmeric, finely diced/grated
• 1 tbsp coconut oil
• 1 tsp vanilla extract
• 4 tbs Lakanto Maple Syrup
• A pinch of salt

Icing
• 1 cup desiccated coconut
• 1/2 cup cashew nuts
• ½ cup sesame seeds
• ½ cup hulled tahini
• 3 tsp grated ginger, finely diced
• 1 tsp ground ginger
• Juice from 1/2 of 1 small lemon

• 3 tbsp coconut oil
• 4 tbsp Lakanto Maple Syrup
• A pinch of salt
• 2 tbs cashew butter

Method
Base
1. Add all ingredients, except the buckwheat grouts, into your food processor or blender.
2. Pulse until well combined, you may need to stop and scrape down the sides occasionally
3. Once all combined add the buckinis and give it a couple of pulses to slightly combine, but you want to keep them whole to get the crunch.
4. Once all combined, press into a lined baking dish. Evenly press the mixture out and flatten it down.
5. Put into the freezer to set while you make the icing.

Icing
1. Add all of the ingredients into your food processor or blender and blend until all is combined.
2. This may take a few minutes as the oils in the sesame seeds heat up and begin to form a creamy-like texture. Stopping to scrape down the sides will be needed.
3. When all combined, remove and spread over the crunchy base.
4. Evenly spread and press the mixture down.
5. When done, put back into the freezer.
6. For best results let it set overnight, however 2-4 hours if you're in a rush.
6. Slice and serve when ready.
