Traditional Turkey with a Twist

This year, Coles wants you to have the best-ever Christmas and is spreading the Christmas cheer with its Christmas Magazine.

Serves: 8-10
Preperation: 15 minutes
Cooking time: 2-3 hours

Ingredients

1 x 3-4kg Coles branded fresh whole turkey, at room temperature
1 quantity Apple-rice stuffing (see recipe below)
1 quantity Ricotta-herb stuffing (see recipe below)
Method
1 Preheat oven to 180°C or 160°C fan. Rinse out turkey and pat dry with kitchen paper. Spoon Apple-rice stuffing into cavity. Spoon Ricotta-herb stuffing under skin of breast, through the neck end. Smooth skin (see step 1, overleaf). Bring neck skin over cavity and secure with a small metal skewer.
Bright idea! Cooking times: To calculate cooking time, weigh the turkey once it has been stuffed. Allow 35 mins per 1kg.
2 Fold each wing back and underneath to secure. Truss the turkey (see step 2, overleaf). Rub butter all over turkey and season well.
3 Place turkey on a rack in a large baking pan. Cover with greased foil. Roast for calculated cooking time, basting every 20 mins. Remove foil for last 30 mins of cooking, to brown. To test if cooked, insert a skewer into thickest part of thigh: the turkey is cooked if the juices run clear. Remove from oven and rest for 15 mins before slicing.
Serve with gravy.


Coles' Ricotta-Herb Stuffing

1. Place 1 cup fresh ricotta, ½ cup grated parmesan, 2 tbsp chopped parsley, 1 bunch snipped chives, 2 crushed garlic cloves and 1 tsp oil in a bowl.2. Season to taste and mix well. Using your hands, carefully ease skin from turkey breast. Push ricotta stuffing under skin and press down to shape

Coles' Apple-Rice Stuffing

1. Heat 1 tbsp of oil in a frying pan on medium. Cook 1 small, chopped onion for 3 mins until soft. Add 175g chopped bacon and cook for another 3 mins, until bacon is brown.
2. Transfer to a bowl. Add 1½ cups cooked rice, 2 peeled, cored and chopped small apples, 1/3 cup slivered almonds, 2 tbsp chopped sage and 1 egg.
3. Mix well. Season to taste and use to stuff turkey cavity.

Serves 8
Preparation: 10 minutes
Cooking time: 6 minutes

Ingredients

30g butter
2 tbsp flour
3 cups chicken stock
1 tbsp sherry

Method
1. Pour off excess turkey drippings from roasting pan, leaving ¼ cup. Add butter to pan, melt on medium heat.
2. Stir in flour and cook for 3 mins, scraping off any crusty pieces, until light brown.
3. Add stock and simmer, stirring, for 3 mins until thickened. Stir in sherry, season, and pour into jug.
