Ingredients
4 large sweet potatoes, whole
2 tablespoons cornflour
½ cup cold water
1 cup fresh orange juice
1 cup unsweetened pineapple juice
2 tablespoons honey (optional)
1 teaspoon grated orange peel
¼ teaspoon salt (optional)
¼ cup chopped pecans or unsweetened shredded coconut
Method
Preheat oven to 180°C. Bake sweet potatoes for 1 hour or until tender. Cool and peel. Slice and place in a casserole dish
In a small bowl, add water gradually to cornflour, stirring constantly to maintain smoothness
Then add orange juice, pineapple juice, honey, orange peel and salt (optional). Mix until well combined and pour over sliced sweet potatoes. Bake in a covered dish until thoroughly heated
Top with chopped pecans or shredded coconut
