Sweet and Sour Seedless Watermelon and Cucumber Salad
The sweet and sour taste works wonders with the light and sweet taste of seedless watermelon.
Ingredients:
o 1/2 cup cider vinegar
o 1 cup water
o 1/2 cup sugar or to taste
o 1 tablespoon poppy seeds
o Salt and pepper to taste
o 1 bunch shallots, trimmed and chopped
o 3 cups seedless watermelon balls
o 2 English cucumbers, peeled, seeded and sliced into small slices
Method:
o Mix vinegar, water, sugar (adjusting to taste) and poppy seeds in a bowl and season with salt and pepper.
o Stir in the chopped shallots.
o Place the seedless watermelon and cucumber in a serving bowl and pour the marinade over the top.
o Serve immediately or cover and refrigerate a couple of hours and toss gently before serving.
o Serve the seedless watermelon and cucumber into a hollow seedless watermelon for extra effect!
