Sweet and Sour Seedless Watermelon Cucumber Salad

Ingredients1/2 cup cider vinegar
1 cup water
1/2 cup sugar or to taste
1 tablespoon poppy seeds
Salt and pepper to taste
1 bunch shallots, trimmed and chopped
3 cups seedless watermelon balls
2 English cucumbers, peeled, seeded and sliced into small slices
Method1.Mix vinegar, water, sugar (adjusting to taste) and poppy seeds in a bowl and season with salt and pepper.
2.Stir in the chopped shallots.
3.Place the seedless watermelon and cucumber in a serving bowl and pour the marinade over the top.
4.Serve immediately or cover and refrigerate a couple of hours and toss gently before serving.
5.Serve the seedless watermelon and cucumber into a hollow seedless watermelon for extra effect!

Ingredients2 cups chopped seedless watermelon
1 ripe mango
Juice from 2 fresh limes
1 tablespoon sugar
1 tablespoon triple sec
2 jiggers tequila
2 cups ice
Method1.Place all ingredients (except the sun and pool of water!) in a blender and puree until smooth.
2.Pour into glasses and garnish with seedless watermelon slices.
3.Drink up!
