Brunch continues to take the world by storm and with it, endless, new and delicious possibilities to kick start your day.
One brekkie ingredient that's more popular than ever is Australian beef. The Aussie favourite is stepping up to the breakfast plate to delight us with a wealth of new options that you can now find on breakfast menus across the nation.
To help bring this brunch trend into Aussie homes, Australian Beef has partnered with Port Melbourne café Third Wave. Known for its loyal breakfast customers and its American-style BBQ offerings after dark, Third Wave has created two mouthwatering recipes.
These two beefy breakfast items will be available to try on Third Wave's menu from June 5 but for those who can't make it to Melbourne, you can also whip them up at home. These simple recipes are a great way to treat yourself or a hungry morning crowd at home.

Get Messy with These Beefy Brekkie Sliders Sunrise Sloppy Joe Slider
Flavour-packed mince and creamy scrambled eggs make this the ultimate burger for weekend brunch goals.

Cooking: 35 minutes
Ingredients
Beef mix
350g beef mince
1 onion, diced
1 red capsicum, finely chopped
3/4 cup tomato puree
2 tbsp cider vinegar
2 tbsp brown sugar
2 tbsp Dijon mustard
1/2 tsp Chilli powder
1/4 tsp cayenne pepper
1/2 tsp ground mustard
1 tbsp Worcestershire sauce
Scrambled eggs
3 eggs
1/3 tbsp butter
1/3 tbsp cream cheese
3 x brioche buns (approx. 80g each)
3 x swiss cheese slices
Tomato sauce
Method Heat oil in a medium pan then fry onion until golden. Add the beef mince and capsicum and fry on medium heat till meat is browned.
Add the rest of the beef mix ingredients and cook covered on low heat for around 30 minutes.
Preheat oven to 160oC.
When the beef mixture is almost ready, beat the eggs and cream cheese in a bowl and season with salt and pepper.
Melt the butter in a nonstick pan on medium to low heat then add the egg mixture. Cook the eggs slowly, mixing constantly until golden and still a bit runny. Remove from pan.
To assemble the sliders:
- Cut each bun in half, and toast the cut side on a hot pan. Butter the cut side.
- Place about a 1/3 of the meat mixture on each bun, then cover the meat mixture with 1/3 of the scrambled eggs. Add tomato sauce, a slice of Swiss cheese then top with bun. Place all sliders into preheated oven until the cheese is melted.
Tips:
You could swap the brioche buns for small burger buns if you are cant find the right ones.
Get creative with you slider toppings and try adding mushrooms, avocado or hot sauce instead of ketchup.
