Shepard Avocado Prawn Bites

Cooking time: 5 minutes
Ingredients
1 Shepard Avocado, roughly chopped
2 tablespoons egg mayonnaise
1/2 teaspoon wasabi paste
16 cooked prawns, peeled and tails left on
8 slices pumpernickel bread cut into 4cm rounds
8 thick slices of continental cucumber
Pickled ginger slices, dill sprigs and salmon roe to garnish
Method
1.Mash together the Shepard Avocado, wasabi and mayonnaise.
2.On each cucumber or pumpernickel round, place a prawn with a dollop of Shepard Avocado mix.
3.Garnish with ginger slices, dill or salmon roe.
