Ingredients
1 tsp vegetable oil
1kg pork mince
1 tsp ginger, chopped
1 tsp garlic, chopped
2 carrots, diced small
200g oyster mushrooms, sliced
2 packets Continental Chow Mein Mince Recipe Base
6 shallots or spring onions
100g water chestnuts, chopped
150g bamboo shoots, finely chopped
1 tbsp salt reduced soy
1 tsp sesame oil
3 iceberg lettuce
1 bunch coriander
Heat vegetable oil in a medium pan and brown mince in batches. Add carrot, ginger and garlic and cook for 2 mins. Add mushrooms and recipe base and cook for a further 5 mins.
Stir through shallots, bamboo shoots, water chestnuts, soy sauce and sesame oil.
Serve to the table with lettuce leaves and a large bowl of the meat served separately for everyone to assemble themselves. Top with coriander and eat immediately.
