Fig, Goat Cheese & Salmon Bacon on Sour Dough

 

Ingredients:

 

4 x thick slices sour dough mixed grain bread, brushed with olive oil, and toasted on a BBQ grill plate

80g (4 cubes) Meredith Goat Cheese

125g cream cheese, room temperature

140g TASSAL Salmon Bacon

2 figs, cut into quarters

 

To serve:

2 tsp honey

2 tsp chopped roasted hazelnuts

pot fresh micro herbs, to garnish

 

 

Method:

 

1. Combine goat cheese and cream cheese in a bowl and mix well.


2. Heat a non stick pan over medium-heat and cook the slices of TASSAL Salmon Bacon for 3 minutes each side, or until golden and crisp. Remove from heat.


3. Generously spread each slice of toasted sour dough with the goat cheese mixture. Arrange a slice of TASSAL Salmon Bacon on top and half a fig. Drizzle with a little honey, sprinkle with hazelnuts and garnish with micro herbs. Serve immediately.
