Rice Balls with Coconut, Walnuts and Dates

Looking for an alcohol-free alternative to rum balls? Well look no further, this Rice Ball recipe is a tasty treat the whole family can enjoy on Christmas Day!

Ingredients
1 cup rice
1 ½ cups oat milk
1 cinnamon stick
Peel of one lemon
½ cup honey
8 dates
1/2 cup walnuts
Shredded coconut for coating

Method
Soak the rice in a bowl for 20 minutes, drain and set aside.
In a pot, boil the oat milk with cinnamon and lemon peel.
Remove the cinnamon and lemon peel, then add rice and half of the honey. Cook for 20 minutes, drain and store in the fridge until cool enough to handle.
Using a food processor, blend the walnuts, dates and remaining honey until it becomes a paste-like mixture.
Make little balls with the walnut, date and honey paste.
Remove the rice from the fridge and cover the walnut and date balls with the rice to make a larger ball.
Roll in coconut and return to fridge until completely cool before serving.
