Ingredients
150g butter, diced and softened
3⁄4 cup CSR Brown Sugar
1⁄4 cup CSR Caster Sugar
1 extra large egg
1 tsp vanilla extract
1 1⁄2 cups self-raising flour
1⁄2 cup plain flour
100g dark cooking chocolate, chopped
Method
Place butter and sugars into the bowl of an electric mixer. Beat until pale and creamy. Add egg and vanilla, mixing until well combined.
Fold in flours and continue mixing until mixture comes together. Remove bowl from machine and fold in chopped chocolate with a large spoon.
Roll a tablespoon full of mixture into balls and flatten slightly onto lined oven trays. Allow some room for a little spreading.
Bake at 180°C for 12-15 minutes until golden. Cool on tray for 5 minutes before transferring to a cooling rack.
Tips: Substitute dark chocolate for white chocolate, or a mixture of chopped nuts and chocolate. For a firmer and crisper biscuit, simply swap the quantities of brown and caster sugar.
