New Atkins Chocolate Endulge Flourless Chocolate Cake

Serves 12-16

Ingredients
270 grams Atkins Milk Chocolate bars
2 x tablespoons brandy (optional)
2 x tablespoons of espresso coffee (decaf or regular)
1/2 cup granulated sugar substitute (Natvia or Splenda)
200 grams unsalted butter, room temperature
200 grams ground almonds
6 eggs, separated
Fresh berries to serve

Method
Preheat oven to 160 degrees. Grease and line base of a round 22-26cm spring form cake tin.
Place a pot of simmering water on the stove. Blend Atkins Milk chocolate bars in food processer and place in a stainless steel bowl over the simmering water to melt. Add the brandy (optional) and coffee.
After one minute, add the butter and sugar substitute to the melted mixture and stir well with a wooden spoon.
Remove the bowl / mixture from heat and stir through the ground almonds.
In a separate bowl, whisk egg yolks and to chocolate mixture. In electric mixture whisk egg whites (on there own) to stiff peaks. Spoon ¼ of the egg white mix into the chocolate mixture and fold through. Gently fold the remaining egg whites into the chocolate mixture. Spoon the mixture into the prepared cake tin and bake for 40 – 45 minutes, it will be fudge like in the centre.
Serve with fresh berries and enjoy.
