Mexican Slaw

Mexican Slaw

Serves 8 -10

Prep time: 30 minutes

Cook time: 5 minutes

 

Ingredients

 

1/2 red cabbage, finely sliced in food processor

2 carrots cut into fine strips or use a mandolin

1 bunch coriander, picked

1 bunch radish, finely sliced and pickled


Dressing

3/4 cup mayonnaise

1 tsp ground cumin

1 tsp ground chilli

1 tsp onion powder

1 tsp garlic powder

2 tsps dried oregano

1 lime, zest and juice

Salt to taste

 

Method

Heat up a small pan and add the spices, cook until fragrant.

Mix all the ingredients together and adjust the seasoning to taste. Let the slaw sit in the refrigerator for about an hour or as long as possible before use to enhance the flavours.

To serve, toss salad ingredients and just enough dressing together in a large bowl.
