Lemon, coconut and chocolate, what's not to love? Small, healthy treats are a great way to introduce kids into balanced eating, giving kids the chocolate, they crave at Easter without overindulging.

Ingredients
200g rice flour
5g baking soda
5g vanilla powder
130g honey
55g coconut oil
Pinch of salt
20ml lemon juice
30g desecrated coconut
Dark chocolate, melted

Method
Preheat oven to 180oC.
Mix all the ingredients except for the dark chocolate in a bowl.
Shape the cookies as desired and place onto a line baking tray.
Bake for 15 minutes or until lightly golden.
Drizzle cookies with melted dark chocolate.
