Manitoba Harvest Hemp Food Range Interview

Winter Salad

Ingredients
For the Salad:
½ head radicchio
1 head green leaf lettuce
1 bulb fennel
1 carrot
1 parsnip
1 apple
3 radishes
½ cup Manitoba Harvest Hemp Heart Toppers – Onion, Garlic & Rosemary

For the Dressing:
½ cup avocado oil
¼ cup Champagne vinegar
1 tablespoon Dijon mustard
1 tablespoon parsley, chopped
½ teaspoon sea salt
1/8 teaspoon white pepper

Method
Prepare dressing by whisking together all ingredients except avocado oil.
In a slow stream, vigorously whisk in the avocado oil until fully incorporated then refrigerate dressing.
Rip or chop lettuces and mix them together in a large serving bowl.
Using a peeler, shave the carrot and parsnip into thin ribbons and pile onto lettuce.
Using a mandolin or knife, thinly slice the remaining produce and pile onto lettuce.

Sprinkle with Manitoba Harvest Hemp Heart Toppers – Onion, Garlic & Rosemary.
Serve salad and drizzle with dressing!

Coconut & Cocoa Hemp Macaroons

Ingredients
3 cups shredded, unsweetened coconut

¾ cup Manitoba Harvest Hemp Heart Toppers – Coconut & Cocoa
½ cup maple syrup
1 teaspoon vanilla extract
6 egg whites
¼ teaspoon sea salt
½ cup dark chocolate
¼ teaspoon coconut oil

Method
Preheat oven to 325°F and lightly grease a baking sheet.
In a large mixing bowl, stir together coconut, ½ cup Manitoba Harvest Hemp Heart Toppers – Coconut & Cocoa, maple syrup and vanilla. Let rest 20 minutes to absorb liquid.
In a separate mixing bowl, whisk with electric mixer egg whites and sea salt until hard peaks form.
Gently fold egg whites into the coconut mixture.
Drop 1 ½ tablespoon sized scoops onto greased cookie sheet.
Bake for 20-30 minutes until edges are golden brown then set aside to cool.
Melt chocolate and coconut oil together.
Dip your macaroons in chocolate mixture then in remaining ¼ cup Manitoba Harvest Hemp Heart Toppers – Coconut & Cocoa.
Place on parchment paper until chocolate is set.

Question: What are the main nutritional benefits of hemp products?

Shaved Brussels Sprouts Salad with Creamy Apple Cider Vinaigrette

Ingredients
Salad:
1 pound Brussels sprouts
½ small red onion
1 medium green apple
1 cup pecans, chopped

Creamy Apple Cider Vinaigrette:
¼ cup Manitoba Harvest Hemp Hearts
2 tbsp. Apple Cider Vinegar
2 tbsp. filtered water
1 tbsp. whole grain or dijon mustard
1 tsp. maple syrup
¼ tsp. sea salt
Pinch black pepper, freshly cracked
½ cup avocado oil

Optional Toppings:
More Manitoba Harvest Hemp Hearts
Vegan Coconut Bacon
Pomegranate seeds

Method
Use a food processor, mandolin or sharp knife to shave Brussels sprouts into thin slices.
Slice the onion and apple thinly as well.
Toast pecans in a dry pan over medium high heat for about 2 minutes, stirring frequently, until fragrant and golden.
In a blender, blend vinaigrette ingredients except oil, until smooth.
While blender is on low-medium, slowly add oil in a steady stream until completely incorporated. Blend 30 more seconds.
Add all ingredients to a large bowl or zip seal bag and gently toss to combine.
Refrigerate 30 minutes to 1 hour before serving to let the flavours mingle. Can be made up to 1 day in advance.
Top with toppings if you desire!
