Greek Pasta Salad with Chicken

This meal is a flavorsome combination of protein and healthy carbohydrates. The Greek pasta salad with chicken will no doubt become a favourite in the food roster. Ingredients
100g wholewheat or buckwheat pasta
1 large chicken breast
200g cherry tomatoes
14 kalamata olives
1/4 red onion, finely sliced
1 Lebanese cucumber diced
Handful of rocket
1/4 cup extra virgin olive oil
Juice of 1 lemon
1 tsp oregano
Optional: fetta

Method
Cook the pasta according to the directions on the packet. Pasta for this is dish is best removed from cooking when slightly undercooked to prevent the pasta falling apart, especially if using gluten free pasta. Once pasta is just cooked remove it from the heat, drain and rinse pasta with ice cold water to prevent further cooking.
Place pasta in the fridge until required.
In a small jar combine olive oil, lemon juice and oregano. Season with salt and pepper. Shake jar to combine.
Pound chicken breast in a freezer bag to flatten. Add 1/2 the dressing mixture to the freezer bag and coat the chicken.
Heat a fry pan to medium heat and cook chicken breast for 4-5 mins per side or until cooked through. Remove from heat and thinly slice.
In a large bowl combine cooked and cooled pasta, cherry tomatoes, red onion, olives, cucumber, rocket and feta if using. Toss to combine. Prior to serving dress with remaining olive oil mixture.
