Gluten Free Berry Nice Muffins

Berry Nice Muffins Gluten Free are a sweet treat everyone can enjoy. Packed full of juicy raspberries and blueberries, they're a moist indulgence that's perfect popped in a lunchbox or enjoyed with a hot drink.

 

Ingredients
1¼ cup gluten free flour*
1½ teaspoons gluten free baking powder
½ teaspoon cinnamon
½ cup caster sugar
6 Gluten Free Weet-Bix biscuits, finely crushed
1 cup frozen raspberries
1 cup frozen blueberries
1 egg, lightly beaten
1 cup So Good Regular
3 tbsp lite olive oil spread, melted
*or your favourite mix of gluten free flour

Method

Sift flour, baking powder and cinnamon into a large bowl.
Stir through sugar, crushed Gluten Free Weet-Bix biscuits and berries.
Combine egg, So Good Regular and lite olive oil spread.
Add liquid ingredients to dry ingredients, stirring gently until just combined.
Spoon mixture into lightly greased muffin tins.
Bake in a moderately hot oven, 190C, for 30 minutes.

Australia's favourite breakfast choice, Sanitarium's Weet-Bix, is champion of the cereal aisle once again after being voted Most Trusted Breakfast Food in the 2016 Reader's Digest Most Trusted Brands survey.


Weet-Bix, a staple for thousands of families every day across Australia, was up against six other leading products, ranking top in a nationwide survey of 2,400 participants which was conducted by Catalyst Research. It is the fourth consecutive year that the 100% Australian owned brand has won the highly coveted title.


Sanitarium Australia's General Manager Todd Saunders said the win reaffirms Australia's love affair with Weet-Bix and the 'Big Blue Box' as one of the most identifiable products on supermarket shelves.


Saunders said "for almost 90 years Weet-Bix has been giving families a healthy start and continues to be a firm household favourite with five boxes of Weet-Bix sold every minute of trade in Australia and a box of cereal found in almost half of Australian homes at any given time," he said.


Jam-packed with goodness, Weet-Bix is made up of 97% wholegrain and provides a great source of iron and B vitamins. As part of a balanced diet, the breakfast cereal is a natural source of fibre, is low in sugar and contains essential vitamins and minerals.
