Gluten-Free Banana Pancakes

Serves 2

Ingredients
3/4 cup Macro Green Banana Flour
1/2 tsp bicarb soda
1 egg
1 ripe banana
1 tsp vanilla bean extract
1 cup Macro Organic Creamy Soy Milk
1 tbs extra virgin olive oil - for cooking
2 tsp Macro Organic Pure Honey
2 tbs lemon juice
Fresh fruit of choice - to top

Method
In a large mixing bowl, combine Macro Green Banana Flour and bicarb soda.
In a small mixing bowl, beat egg and stir in ½ cup milk. Pour into flour mixture and combine.
Mash banana and stir evenly into pancake mixture. Add remaining milk and combine. Add vanilla bean extract and stir.
Heat small amount of olive oil on a non-stick fry pan over medium heat. Spoon pancake mixture onto pan at desired size. Once bubbles start to form around the edges, flip and cook for a few minutes or until golden brown.
Remove from pan and repeat with remaining batter.
Top pancakes with lemon juice, honey and fresh fruit of choice.
