Dukkah Haloumi Crusted Broccoli Cauliflower Bake

"Dukkah haloumi crusted broccoli and cauliflower bake how have we not met before??!?!?! Dairy Farmers has just launched their new A2 Goodness + Prebiotics Milk, the first in Australia with added prebiotics (galacto-oligosaccharides) to support every day gut health. Naturally I wanted to get it into some scrumptious recipes stat soooooo a delicious warming veggie bake seemed the logical first step! Ingredients:
1 small (350g) head broccoli, chopped into florets
1/2 head (400g) cauliflower, chopped into florets
1/4 cup extra virgin olive oil
75g butter
1/3 cup (42g) arrowroot flour
3 cups (750ml)
Dairy Farmers A2 Goodness + Prebiotic Milk
4 tablespoons nutritional yeast or alternatively grated parmesan
2 teaspoon dijon mustard
1/2 cup(58g) almond meal
80g haloumi, grated
3 tablespoons dukkah

Method:
Heat oven to 200C and line a lasagne dish with greaseproof paper.
Add broccoli, cauliflower and olive oil to dish, toss to coat and place in oven to cook for 30 minutes.
Once cooked, add the butter beans to veg and remove the baking sheet, leaving the veggies and beans in the dish ready for the milk sauce and dukkah crust.
Add butter to a saucepan on medium heat and melt completely, then sift in arrowroot flour and cook, whisking for 2-3 minutes.

Add Dairy Farmers A2 Goodness + Prebiotic Milk , dijon and nutritional yeast (or parmesan if using) to the saucepan and bring to a low simmer, whisking continuously until the sauce thickens.
This should take approximately 5-6 minutes.
Season with sea salt and black pepper, then pour over the broccoli and cauliflower and toss gently to coat it all. Sprinkle almond meal over the top and add grated haloumi.
Spray with some extra virgin olive oil and place in oven to cook for 20 minutes. Turn the grill on and grill the top for 5-6 minutes or until lightly golden.
Once cooked sprinkle dukkah over the top and serve.
