"The main difference between rubs, pastes and marinades is their consistency", says Donna. "Rubs combine dry spices and herbs and need to be rubbed into the surface of the meat. A paste contains the same ingredients as a rub but is usually held together with a liquid , such as oil. They both provie instant flavour as the sauce is cooked onto the meat. Marnades, on the other hand, have a more liquid consistency and have a seasoned acidic element, such as vinegar or lemon juice."
"Garlic and lemon-chilli marinated chicken on the barbecue, a few tossed salad leaves, and the family outside enjoying the long summer days - that's my idea of heaven."
Summer Fruits byt he case? Make the most of it
"Summer is by far the best time for making jams and fruit-based desserts," says Donna. "When they look so beautiful and ripe I can't help myself! I buy my peaches, plums and nectarines by the case and spend an afternoon cooking the things my grandmother used to make".
From vanilla poached white peaches and strawberry and passionfruit jam to spiced plum sauce and apricot slice, each recipe will inspire you to take a little time out to savour the process.
