Chocolate Coconut Slice

Looking for some distractions in the current climate? With some spare time on our hands, it's the perfect time to bake and hone in your creative skills in the kitchen. 

CSR Sugar has prepared this recipe to help you make the most of what is left in your pantry. 

This mouthwatering recipe uses CSR's Brown Sugar (200g) and Icing Sugar (1 cup). With its moist slice base and rich chocolate coat, you can satisfy your tastebuds in just 30 quick minutes!

Ingredients
200g CSR Soft Brown Sugar
1 egg, lightly beaten
1 tsp vanilla extract
110g plain flour
1 tsp baking powder
2 tbsp cocoa powder
3⁄4 cup desiccated coconut
Extra coconut to decorate

Rich Chocolate Icing:
1 cup of CSR Icing Sugar
1 tbsp cocoa powder
2 tsp of butter (approx. 10g)
1 1⁄2 tbsp hot water

Method

Preheat oven to 175°C then grease and line a rectangular slice tin (19cm x 29cm) with baking paper.
Beat butter, sugar, egg and vanilla in a bowl.
Sift in flour, baking powder and cocoa and mix well, stir in coconut.
Spread mixture into tin and bake for approx. 20-25 minutes or until firm.
Remove from oven and spread with Rich Chocolate Icing while slice is still hot, then sprinkle with extra coconut.
Allow to cool before cutting - slice should be slightly chewy.

For the Icing:
Mix CSR Icing Sugar and cocoa powder into a bowl, add butter and hot water, mix well until smooth.
Icing should spread easily, if it is too thick add a little more hot water to allow it to spread well.
Tip: To make this recipe dairy free, substitute the butter for coconut oil.
