Chicken Drumsticks with Apricots

Ingredients

    1 teaspoon of butter
    2 onions, cut into rings
    8 chicken drumsticks
    2 tablespoons chicken seasoning
    16 apricots
    50g/1.7 oz raisins
    200ml/7 fl oz chicken stock
    1/2 bunch flat-leaved parsley, coarsely chopped

Preparation

Heat the butter in a pan. Sauté the onion rings until transparent. Remove them from the pan and set aside. Season the drumsticks with chicken seasoning. Fry until golden brown on all sides. Add the sautéed onion, apricots and raisins to the pan. Cook for another few minutes. Pour over the chicken stock and bring to a boil. Reduce the heat and cover the pan, leave to cook for another 15 to 20 minutes over a low heat. Garnish with parsley.
