Pitos Smokehouse BBQ - Char-Grilled Capsicum and Goats Cheese Dip

Preparation time: 15 minutes
Cooking time: 8 minutes
Serves: 4

Ingredients

2 red capsicums, seeded and cut into quarters
100g goats cheese
Salt and cracked black pepper
1 tablespoon olive oil
Chopped flat leaf parsley, to serve
200g Pitos (Smokehouse BBQ)

Method

1. Heat a stovetop grill or barbecue grill on high heat. Spray the skins of the capsicums with a little oil spray, then place on the grill skin side down.

2. Cook for 6-8 minutes or until the skin is quite charred. Remove the pieces from the grill, place in a plastic bag and seal for 10 minutes (this allows the capsicum flesh to sweat off the skin).

3. Remove the capsicum from the bag and peel away the skin. Discard skin and place the flesh in a food processor or blender along with the goats cheese, salt, pepper and olive oil. Blend until fully combined.

4. To serve, transfer dip to a serving bowl and sprinkle with a little chopped flat leaf parsley. Serve with Pitos (Smokehouse BBQ).

Tip:
Pitos (Spicy Moroccan) or Pitos (Tangy Tomato & Red Pepper Salsa) can be used as an alternative to Pitos (Smokehouse BBQ).



Pitos Tzatziki - Smoked Salmon Bites

Preparation time: 15 minutes
Serves: 4

Ingredients

75g reduced fat cream cheese
1 tablespoon finely chopped mint
1/2 teaspoon finely grated lemon rind
Salt and cracked black pepper
100g Pitos (Tzatziki)
50g smoked salmon


Method

1. Place the cream cheese, mint, lemon rind, salt and pepper in a small bowl and mix until combined.

2. Lay the pita chips out on a flat surface and place a small spoonful of cream cheese mixture on each chip.

3. Cut the smoked salmon into small pieces and place on top of the cream cheese mixture. Transfer the Pitos (Tzatziki) to a serving plate and serve immediately.

Tip:
As an alternative, chop the smoked salmon and mix into the cream cheese mixture. Serve as a dip to accompany the Pitos (Tzatziki). Pitos (Sweet Chilli & Sour Cream) can be used as an alternative to Pitos (Tzatziki)



Pitos Sweet Chilli and Sour Cream - Quick Nachos

Preparation time: 5 minutes
Cooking time: 4 minutes
Serves: 4

Ingredients

100g Pitos (Sweet Chilli and Sour Cream)
210g can kidney beans, rinsed and drained
1 cup grated low fat tasty cheese
1 avocado, roughly mashed
2 teaspoons lemon juice
Salt and cracked black pepper
Chopped coriander, to serve

Method

1.Preheat oven grill on high. Place the Pitos (Sweet Chilli and Sour Cream) in a large oven-proof bowl. Spoon the kidney beans over the pita chips. Top with the grated cheese. Place under the grill and cook until cheese is melted.

2.As the nachos are under the grill, combine the avocado, lemon juice, salt and pepper.

3.To serve, spoon a dollop of avocado mix on top of the nachos and sprinkle with a little chopped coriander. Serve immediately with low fat sour cream, if desired.

Tip: Pitos (Tangy Red Pepper & Salasa) can be used as an alternative to Pitos (Sweet Chilli & Sour Cream).
