Ingredients
2 Green Star apples
8 slices prosciutto
100g baby rocket
75g goats cheese
2 tablespoons olive oil
3 teaspoons lemon juice
2 teaspoons chopped chives
cracked black pepper, to serve
Method
Cut the Green Star apple into very thin slices. Set aside.
Tear the prosciutto into rough pieces.
Arrange the rocket in serving bowls along with the apple slices and prosciutto. Crumble over the goats cheese.
Whisk together the oil, lemon juice and chives. Drizzle over salad and serve sprinkled with cracked black pepper.
Two of Australia's newest apples are expected to make their mark this season
If you haven't tried a Kanzi or Greenstar yet, this is the season to get crunching. A bumper crop of the sweet and juicy new apples has hit supermarkets and green grocers – up to 50% more fruit than last year – due to ideal growing conditions.
Ian Cathels, a second-generation apple grower from premium growing region Batlow says, 'We've had steady rain this year, resulting in particularly good-looking and tasting fruit. We are certain that there will be high demand for these apples – our main focus is planting enough trees to keep up with it as more and more people try the apples each year."
Kanzi is naturally bred, and is a cross between a Gala apple and a Braeburn apple.
'Kanzi combines the juiciness of a Gala and tanginess of a Braeburn. It has an intense flavour that is the perfect balance of sweet and tangy. In addition to being a shiny, bright red colour they don't bruise easily," said Mr Cathels.
Greenstar, which is also naturally bred, is sweet, crunchy and stays white long after slicing. It is a cross between the Delbar Estival and Granny Smith varieties, both of which are known for their juiciness and fresh taste.
'As Australia's only sweet green apple, people are often surprised at Greenstar's sweet flavour. Greenstar is unique, having up to three times more vitamin C than other apples, keeping them from browning when cut," added Mr Cathels.

Take of advantage of Greenstar staying white when cut by adding slices to school lunchboxes.
Mix celery, walnut, red onion and Greenstar for a delicious salad that can be made hours in advance with the apple remaining an impressive bright white.
Slice Greenstar and pair with your favourite cheeses on a plate. The sweetness of the Greenstar makes a delicious partner with the creaminess of the cheese.
Freshly juiced Greenstar is a great ways to kick start your day. The sweetness of the Greenstar pairs well with celery and kale to create the ultimate green juice.
Tips for using Kanzi:
Kanzi is ideal to make apple sauce for a pork roast. Boil then puree the apples with sugar and lemon and serve up with your next Sunday roast.
Simmer white wine, cabbage and sliced Kanzi for a delectable Sauerkraut that pairs well with pork knuckle or sausages.
Peel Kanzi and poach in boiled water with sugar and cinnamon for an easy yet impressive dessert.
