Gluten Free Italian
Don't eat gluten? No need to miss out on the joys of Italian cuisine. Learn how to cook gluten free pasta that cooks and tastes just like regular pasta. Dishes include a gluten free elbow pasta with prawn, broccoli and ricotta sauce, cooked risotto style, as well as a gluten free spaghetti with chicken, cherry tomatoes and pesto alla Genovese.

Celebrating Italian Easter
Easter, or Pasqua, is an event in Italy not to be missed. Parades and celebrations are held in towns throughout the country and as with any Italian celebration, the festivities would not be complete without a feast. Learn how to make a flavourful egg pappardelle with ragu, goat cheese and a balsamic vinegar reduction. The class will be finished off with a mouthwatering tempered chocolate Easter egg complete with mascarpone mousse and toasted Colomba (an Italian Easter cake).

The World Of Pasta – Fresh Vs Dry
Long, short, filled, flat, dry, fresh, baked, curly and flat; the world of pasta is endless. This class will see you prepare two dishes – one using fresh pasta and one using dried pasta. First up will be fresh tortellini that you'll make from scratch, stuffed with pumpkin in a butter and sage sauce. Next will be a regional classic of dried linguine with clams and pesto alla Genovese.

Mothers Day Special
Whether you want to learn how to make something special for your mum or spend some quality time with her this Mother's Day this class will be perfect for you. You will create Mozzarella in Carrozza, a fried Italian favourite that oozes molten mozzarella cheese, served with a vegetable salad and sundried tomato pesto. For main, you will make a decadent egg tagliatelle with crab and roasted capsicum sauce.

Winter Warmers
Italians know comfort food and these winter warmers are sure to please. The class will kick off with a lasagna with porcini mushrooms and taleggio cheese, followed by pork involtini with red wine and garlic sauce and soft rosemary polenta.
